Couscous with Leeks, Bok Choy and Onions

I've been wanting to make couscous for some time now but just kept forgetting to buy the couscous. Well, World Market sent me a free $10.00 towards food purchase for my reward card anniversary, so I used it to buy some couscous (along with items I only buy at World Market, such as already cooked polenta and dark chocolate bars). This is such a simple dish and could easily be made into a main course by adding some protein. I left it on the side this time and served a bit of chicken and baked falafel patties–a Mediterranean inspired meal.

Serves 6
 
Ingredients:
  • 2 cups chicken broth
  • 2 cups dried couscous
  • bok choy, chopped (I used 2 “leaves”)
  • 1 leek, chopped
  • 1/2 medium onion
  • salt/pepper, to taste
  • garlic powder, to taste (about 1/4 tsp)
  • 3 scallions, chopped (optional-for garnish)
Preparation:
  • Boil the 2 cups of chicken broth, remove from heat and stir in the couscous and then cover
 
  • In large skillet, cook the leeks, onions and bok choy until tender (I added a few cubes of my homemade chicken stock to facilitate the softening up process–about 1/2 cup of broth)
 
  • Once the vegetables are cooked through and soft, add them to the couscous and mix well
  • Add in the seasonings and cover until ready to serve
1/6th of couscous = 131 calories
Cook's Notes:
*personally, I think couscous is much tastier than rice and you can eat more it for the same number of calories
*with 4 oz of chicken and 3 falafel patties = 359 calories; that is a low calorie yet filling meal

    I have some couscous in my pantry right now!!! I like the idea of pairing it with bok choy. Love that stuff!

      It was really good all mixed together–I had the leftovers for lunch the next day. Of course, you and your husband would probably want to make about 1/3 of the recipe, huh?
